Do it yourself: Strawberry delight with mint foam

To celebrate summer, indulge yourself and enjoy a refreshing strawberry treat. Clément Duteil, our Pastry Chef reveals you his juicy recipe:

Recipe for 4 to 6 people

Strawberry purée ingredients:

strawberries

1kg

sap

100g

fresh mint leaves

10g

thym

5g

Ginger

10g

Take a large bowl and mix all the ingredients together. Then, let the mousse chill in a refrigerator for 12 hours.

Use a blender to get a smooth texture and pass it through a strainer. Keep the preparation in the fridge until serving.

Ingredients for the mint foam:

milk

500ml

cream

500ml

fresh mint leaves

1 bunch

sugar

100g

To make the mint foam, slowly warm up the milk, with the cream and sugar.

Add the washed mint leaves and stir it for 15 to 20 minutes to infuse the preparation.

Pass it through a strainer and let it cool down.

Use hand mixer to obtain a light foam.

Pour the strawberry purée into the bowl of your choice and place on top the mint foam (without liquid). Decorate the dessert as you like.
